International Burger Day is nearly here, and we’re celebrating with four irresistible burgers, each paired with one of our kombuchas. Whether you're into crispy chicken, rich duck, or a proper veggie option, this guide brings together bold flavours and refreshing brews.

Forget the beer—this is the Kombucha & Burger Renaissance.

1. Fried Chicken Burger + Lady Sourmouth

Apple, Lemon & Ginger Kombucha

The Burger: Crispy Buttermilk Fried Chicken with Tangy Slaw

Ingredients (Serves 2)
  • 2 boneless chicken thighs or breasts
  • 240 ml buttermilk
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper
  • 120 g plain flour
  • Vegetable oil, for frying
  • 2 brioche or sesame burger buns
For the Slaw
  • 100 g shredded white and/or red cabbage
  • ½ carrot, grated or julienned
  • 1 tbsp apple cider vinegar
  • 2 tbsp mayonnaise
  • ½ tsp Dijon mustard
  • Salt, pepper, and a squeeze of lemon
Method
  1. Marinate chicken in buttermilk with spices, salt and pepper for at least 30 minutes (or overnight).
  2. Heat oil in a deep pan to 170–180°C.
  3. Dredge chicken in seasoned flour.
  4. Fry until golden brown and cooked through, about 6–8 minutes. Drain on kitchen paper.
  5. Mix slaw ingredients.
  6. Toast buns, layer with slaw and hot chicken.
  7. Serve with Lady Sourmouth.

2. Smash Burger with Peanut Butter Mayo + Lord Hopsworth

Blueberry & Hops Kombucha

The Burger: Double Smash Burger with Peanut Butter Mayo and Pickled Onions

Ingredients (Serves 2)
  • 300 g minced beef (20% fat ideal)
  • Salt and pepper
  • 4 slices mature cheddar
  • 2 burger buns
For the Peanut Butter Mayo
  • 2 tbsp mayonnaise
  • 1 tbsp smooth peanut butter
  • 1 tsp soy sauce or lime juice
Quick Pickled Onions
  • ½ red onion, finely sliced
  • 2 tbsp white wine vinegar
  • 1 tsp sugar
  • Pinch of salt
Method
  1. Mix onion, vinegar, sugar and salt. Set aside for at least 10 minutes.
  2. Form beef into four loose balls (around 75 g each).
  3. Heat a pan until very hot. Smash the balls flat with a spatula, season, and cook for 1–2 minutes each side. Add cheese after flipping.
  4. Toast buns. Mix the peanut butter mayo and spread generously.
  5. Assemble with patties and pickled onions.
  6. Serve with Lord Hopsworth.

3. Duck Burger + Sir Christopher Berry

Mixed Berry Kombucha

The Burger: A Simple Duck Burger with Plum Sauce and Rocket

Ingredients (Serves 2)
  • 2 duck burger patties (ready-made)
  • 2 brioche buns
  • 2 tbsp plum or hoisin sauce
  • Handful of rocket
  • Optional: cucumber slices or pickled radish
Method
  1. Cook duck patties in a hot pan for 3–4 minutes per side or until cooked through.
  2. Toast buns lightly.
  3. Spread plum sauce on the base, add rocket and duck patty.
  4. Add optional cucumber or radish if using.
  5. Serve with Sir Christopher Berry.

4. Bean Burger with Apple & Celeriac Slaw + Lady Sourmouth

The Burger: Spiced Bean Patty with Apple-Celeriac Slaw

Ingredients (Serves 2)
For the Patties
  • 1 x 400 g tin black beans, drained
  • ½ onion, finely chopped
  • 1 garlic clove, minced
  • ¼ tsp ground cumin
  • ¼ tsp smoked paprika
  • 2 tbsp breadcrumbs
  • 1 egg (or flax egg for vegan)
  • Salt and pepper
  • Olive oil, for frying
For the Slaw
  • ½ green apple, julienned
  • 100 g celeriac, shredded
  • 1 tbsp lemon juice
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt and pepper
Method
  1. Mash beans with onion, garlic, spices, breadcrumbs, egg, salt and pepper.
  2. Shape into two patties and chill for 10–15 minutes.
  3. Fry in olive oil over medium heat, 3–4 minutes per side.
  4. Mix slaw ingredients.
  5. Assemble on toasted wholemeal buns and top with slaw.
  6. Serve with Lady Sourmouth.
