
Crispy Brie Parcels with Cranberry & Thyme
Crisp filo pastry wrapped around molten brie is always a crowd-pleaser. Add cranberry sauce and thyme, and suddenly you’ve got the taste of Christmas in a bite-sized parcel. These are perfect as a starter, a party nibble, or even a little something to pass around while the mulled wine flows.
Ingredients (makes 12 parcels)
- 6 sheets filo pastry
- 200g brie, cut into 12 cubes
- 6 tsp cranberry sauce (or use our Cranberry & Port Relish recipe)
- Small bunch thyme, leaves picked
- 60g butter, melted (or olive oil for brushing)
Method
- Preheat oven to 200°C (fan 180°C). Line a baking tray with parchment.
- Cut each filo sheet into 4 rectangles. Brush with melted butter.
- Place a cube of brie in the centre, top with ½ tsp cranberry sauce and a few thyme leaves.
- Fold up the pastry like a parcel and twist to seal. Brush lightly with more butter.
- Bake for 12–15 minutes until golden and crisp.
Serving Tip: Serve warm with a little extra cranberry sauce on the side.
Make Ahead: Assemble parcels a few hours in advance, keep chilled, and bake just before serving.
