
Spiced Apple Cake Recipe

Spiced Apple Cake Recipe
Ingredients:
For the cake:
- 250g) all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
- 200g granulated sugar
- 100g brown sugar, packed
- 180ml vegetable oil (or melted coconut oil)
- 3 large eggs
- 1 teaspoon vanilla extract
- 3 medium apples, peeled, cored, and diced
- 120ml buttermilk or plain yogurt
- Optional: 60g chopped walnuts or pecans for added crunch
For the topping (optional):
- 50g granulated sugar
- ½ teaspoon cinnamon
Instructions:

Preheat the oven to 175°C. Grease a 9x13-inch (23x33 cm) baking pan or line it with parchment paper.

Mix the dry ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.

Prepare the wet ingredients:
- In a large mixing bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine wet and dry ingredients:
- Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk. Start and end with the flour mixture to ensure even mixing. Stir until just combined.

Fold in the apples and nuts:
- Gently fold the diced apples and optional walnuts/pecans into the batter.

Pour and spread:
- Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Optional topping:
- Mix the ¼ cup sugar and ½ teaspoon cinnamon together and sprinkle it over the batter for a slightly sweet, crisp topping.

Bake:
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the centre comes out clean.

Cool and serve:
- Allow the cake to cool in the pan for at least 15 minutes before slicing. Serve warm or at room temperature.
