1. Mixed Berry Kombucha Spiced Christmas Glaze
Deep, jammy, warming & beautifully festive
This glaze uses Sir Christopher Berry Mixed Berry Kombucha to create a luxuriously sticky, berry-rich coating. Warm spices and balsamic vinegar turn it into a mulled-berry style glaze.
Ingredients
- 250 ml Mixed Berry kombucha
- ¾ cup dark brown sugar
- ¼ cup blackberry or raspberry jam
- 2 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- ½ tsp cinnamon
- ¼ tsp clove or allspice
- 1 tbsp butter
- Pinch of salt
Method
- Simmer kombucha until reduced by half.
- Whisk in jam to create a berry-rich base.
- Add sugar, balsamic, mustard and spices; simmer until glossy.
- Stir in butter off-heat.
- Brush onto the ham during the last 45–60 minutes of cooking.
2. Ginger–Apple–Lemon Kombucha Citrus Ginger Glaze
Bright, sharp, zesty & refreshing
This lively glaze uses Lady Sour Mouth Ginger–Apple–Lemon Kombucha for a sharp, citrus-forward finish that cuts beautifully through the rich ham.
Ingredients
- 250 ml Ginger–Apple–Lemon kombucha
- ½ cup light brown sugar
- 2 tbsp lemon juice
- Zest of one lemon
- 1 tbsp fresh ginger
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- Pinch of chilli flakes (optional)
- 1 tbsp butter
- Pinch of salt
Method
- Reduce kombucha by half, then add lemon zest, lemon juice and ginger.
- Add sugar, honey, vinegar and optional chilli; simmer until syrupy.
- Whisk in butter.
- Glaze the ham during the final 45 minutes of roasting.
