Ultimate Vegan Burger Recipe with Beans, Chillies, and Mushrooms

This vegan burger is the ultimate way to satisfy your cravings, packing a bold and spicy kick. Not only is it irresistibly delicious, but it also boasts an impressive NINE of the 30 plant-based ingredients recommended per week for a healthy, diverse diet. Ingredients

  • For the Burger:

    • 250g cooked black beans (or kidney beans), drained and rinsed
    • 150g button or cremini mushrooms, finely chopped
    • 1 small red onion, finely diced
    • 2 cloves garlic, minced
    • 1 red chilli (adjust for spice preference), finely chopped
    • 50g rolled oats or breadcrumbs
    • 1 tbsp ground flaxseed mixed with 2.5 tbsp water (flax egg)
    • 1 tbsp soy sauce
    • 1 tsp smoked paprika
    • 1/2 tsp cumin
    • Salt and pepper to taste
    • 2 tbsp olive oil for frying
  • To Serve:

    • Vegan brioche burger buns
    • Lettuce leaves
    • Tomato slices
    • Vegan mayo mixed with sriracha sauce
    • Pickles or caramelised onions (optional)

Instructions

  1. Prepare the Base:

    • Heat a non-stick pan with a splash of olive oil. Sauté the onion, garlic, and chilli until softened.
    • Add the mushrooms, soy sauce, smoked paprika, and cumin. Cook until the mushrooms release their liquid and reduce.
  2. Make the Patty Mixture:

    • in a food processor gently blitz the beans leaving some texture.
    • Add in the mushroom mixture, oats or breadcrumbs, flax egg, and a pinch of salt and pepper. Mix until combined and form into 4 equal-sized patties. refrigerate for a couple of hours to firm up.
  3. Cook the Patties:

    • Heat olive oil in a frying pan over medium heat. Fry the patties for 3-4 minutes on each side until golden brown and heated through.
  4. Assemble the Burgers:

    • Toast the burger buns if desired. Spread vegan mayo or sriracha on the bottom bun, layer with lettuce, a patty, tomato slices, and any additional toppings. Add the top bun and serve immediately.
