
Ultimate Vegan Burger Recipe with Beans, Chillies, and Mushrooms

Ingredients

For the Burger:
- 250g cooked black beans (or kidney beans), drained and rinsed
- 150g button or cremini mushrooms, finely chopped
- 1 small red onion, finely diced
- 2 cloves garlic, minced
- 1 red chilli (adjust for spice preference), finely chopped
- 50g rolled oats or breadcrumbs
- 1 tbsp ground flaxseed mixed with 2.5 tbsp water (flax egg)
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil for frying

To Serve:
- Vegan brioche burger buns
- Lettuce leaves
- Tomato slices
- Vegan mayo mixed with sriracha sauce
- Pickles or caramelised onions (optional)

Prepare the Base:
- Heat a non-stick pan with a splash of olive oil. Sauté the onion, garlic, and chilli until softened.
- Add the mushrooms, soy sauce, smoked paprika, and cumin. Cook until the mushrooms release their liquid and reduce.

Make the Patty Mixture:
- in a food processor gently blitz the beans leaving some texture.
- Add in the mushroom mixture, oats or breadcrumbs, flax egg, and a pinch of salt and pepper. Mix until combined and form into 4 equal-sized patties. refrigerate for a couple of hours to firm up.

Cook the Patties:
- Heat olive oil in a frying pan over medium heat. Fry the patties for 3-4 minutes on each side until golden brown and heated through.

Assemble the Burgers:
- Toast the burger buns if desired. Spread vegan mayo or sriracha on the bottom bun, layer with lettuce, a patty, tomato slices, and any additional toppings. Add the top bun and serve immediately.
