Kombucha is fermented tea, but that description doesn't do it justice.

The fermentation process transforms brewed tea into something genuinely complex: naturally fizzy, slightly tart, rich in organic acids and live cultures. It's what happens when a carefully nurtured SCOBY culture works through the tea over several days, producing a drink that no amount of artificial flavouring can replicate.

At Monty Booch, we brew in small batches near Buckingham using premium tea as our base. We don't pasteurise, we don't filter, and we don't cut corners. The result is a fermented tea with real depth, the kind that prompted the Great Taste Award judges to award Sir Christopher Berry 2 Stars in 2025, praising its "depth of fermentation" and "beautiful balance."

Each of our flavours starts from the same raw fermented tea base, with real fruit added for the second fermentation. No concentrates, no artificial additions, just the natural chemistry of fermentation doing what it's done for over 2,000 years.

If you've only ever tried supermarket kombucha, this is a different drink entirely.
